Back in time: Yet Con Chicken Rice (逸群鸡饭)

A couple weeks ago, my Australian buddy Cyn (best known as The Food Pornographer) and her partner Jac were in town. Thanks to the wonderful world wide web, Cyn and I connected via Twitter (I think). A few years ago, I made a trip to Perth, and I had such a fun time eating and chatting with her. So I was super dope when both Cyn and Jac were in Singapore–this means lots of eating (duh) and catching up.

The one great thing about having overseas guests is you get to be a tourist again–going to places that you rarely visit–Yet Con is one of them. Located along Purvis Street, Yet Con is an icon. Founded in 1940, stepping into Yet Con, I felt as if I have been transported into another world. The furnishing is old school coffeshop. The owner sits behind the counter, directing customers to their seats. And the place does smell a bit funky.

Among the three of us, we ordered chicken, Hainanese pork chop and mixed chop suey. At Yet Con, they only serve steamed chicken (白鸡) and you do not get to choose your preferred part. So we got half a chicken to share. The chicken itself was quite lean, like kampong chicken. The skin was not fatty and the meat was very flavourful. To me, the rice was equally important too. Yet Con’s version was savoury and tasty. As we have a second eating session, I showed restraint and did not order another bowl of rice.

The oriental-style Hainanese pork chop is one of Yet Con’s signature dishes. Jac found the sauce too sweet while Cyn quite enjoyed the chop. The mixed chop suey that we ordered was pretty good too–the dish had cabbage, baby corn, sotong, prawns and pork. It was refreshing and helped to cut the richness of the chicken.

Chicken rice is a dish I feel that is often taken for granted. It is readily available everywhere in Singapore. Yet Con’s version is quite unlike the ones we find at hawker centres. Most importantly, eating at Yet Con transports one into another era. I personally think everyone should give this institution a try.

An overdue lunch at Violet Oon’s Kitchen

I have a bunch of girlfriends that I have known for years. They are uber talented, smart and “crafty”. We communicate mostly via social media, and we rarely meet up for lunch. Even if we do, there is always one or two missing in the picture. So FINALLY we managed to sit down and have a meal together at Violet Oon’s Kitchen.

All of us ordered a different main and some starters to share. I have heard so much about the dry laksa that I had to get it. It definitely lived up to the expectation. It is not exactly a fried noodle dish – it has enough sauce to coat the noodles without being sloppy. The rempah was beautifully done and they have added the right amount of coconut milk so you would not be sick of the laksa. And there were so much “liao”(translate: ingredients)–beancurd puff, fish cake and prawns. Everyone (including myself) loves this dry laksa.

My friend, R got the dry mee siam. Unlike the dry laksa, you don’t think you are eating dry mee siam. Perhaps it was the choice of noodles which was thick noodles. When I think of mee siam, I always relate to thin vermicelli. However the spices were well done, it was still a good dish.

At our table, another friend, R was brave enough to try the buah keluak pasta. The pasta was a tad too spicy for me but the buah keluak tapenade was strangely nice and addictive. I could not describe the flavour but it was rich and savoury. If the spice level was slightly lowered, I think I can polish off the entire plate

We also ordered the kueh pie tee and ayam goreng to share. The ayam goreng aka fried chicken was crispy and the flavour was pretty good. But the chicken was over-fried, it was a bit dry for me. The kueh pie tee fared so much better. The filling which was made up of bamboo shoots and turnips that were beautifully cooked in a rich prawn broth, making the entire dish super tasty.

We ended our meal with the bread and butter pudding with whisky and custard sauce. The pudding itself was moist and not too sweet. The whisky and custard sauce was the bomb (though some of the alcoholics at the table felt that the sauce can do with more whisky). This is one dessert that I would strongly recommend.

Though I am not sure when we will gather for another meal, this was sure a lot of fun. We filled the restaurant with our laughter and loud chatter. And it was made even better with delicious food in our tummies.

Roast chicken with sumac, za’atar and lemon (and yes, a new website. FINALLY!)

Welcome to my new site, oink! I have been planning for this website since the beginning of last year. Obviously efficiency is not in my blood. After almost two years, I finally got the site published. And I couldn’t have done it without some help. Big thanks to Amy (aka Pikaland) for helping me with ideas for the site and editing my profile. And big hugs to Serene, the genius developer behind the site whose efficiency never failed to impress me and so very patient to answer all my idiotic questions on data migration, hosting and blah blah (for your information, she is still entertaining my not very clever questions).

There is still one more thing that I am adding to the site *cough, online store* which will take me a while (read: a very long time) to get that going. In the meantime, I am going to celebrate the launch of the site with a roast chicken recipe. I am a huge fan of Yotam Ottolenghi and Sami Tamimi – this dynamic duo’s recipes are easy to follow, and most importantly their food is delicious.

For this particular recipe, it is unlike the usual roast chicken that we are familiar with, this one is lemony, fragrant and really addictive. It is really great over a plate of rice or have it with some warm bread (I made maneesh, and I will share the recipe in the next post). I also made some sort of rice porridge with the leftover and it was strangely comforting.

Roast chicken with sumac, za’atar and lemon
(Adapted from Yotam Ottolenghi and Sami Tamimi’s Ottolenghi, The Cookbook)
I made quite a far bit of changes to the recipe. Originally it is suggested to use a whole chicken–me being Asian, I favour chicken legs and thighs. Za’atar is not a common mixed herbs that you can find in the supermarket (I got mine from Overdoughs). However you can easily make it at home. And sumac is readily available in good supermarkets like Jason’s and Marketplace (Overdoughs also stocks sumac).

Serves 4

Ingredients
1) 8 pieces of chicken legs and thighs
2) 2 red onion, thinly sliced
3) 2 cloves of garlic, crush
4) 4 tablespoon olive oil
5) 1½ teaspoon ground allspice*
6) 1 teaspoon ground cinnamon
7) 1 tablespoon sumac
8) 1 lemon, thinly sliced
9) 200ml of water
10) 1½ teaspoon (kosher) salt
11) 1 teaspoon freshly ground black pepper
12) 2 tablespoon za’atar

Methods
-            In a large bowl, add in the red onion, garlic, olive oil, allspice, cinnamon, sumac, lemon, salt, pepper and water, and mix well. Place the marinade in a ziplock bag, add in the chicken and seal the bag. Move the chicken pieces around to ensure every piece is well coated. Place the bag in the fridge and leave it overnight.
-            Preheat the oven to 200oC. Using a large tray, place the chicken pieces and marinade. Space the chicken pieces apart and skin side up. Before putting the tray in the oven, sprinkle the za’atar over the chicken. Bake the chicken for around 30-40 minutes.
-            Once the chicken is done, finish with a drizzle of olive oil, and sprinkle a bit more za’atar and sumac.

*Allspice is a spice (a type of pepper). Allspice is often mistaken as mixed spice.

oink’s guide to … New York City! Per Se

When I was planning my trip to New York, I know there was that one restaurant that I want to try – Per Se.

Months before the trip, I was reading Grant Achatz’s Life, On the Line. In the book, Achatz illustrated the time he spent at the French Laundry, and the way he described Thomas Keller (owner of the French Laundry and Per Se) made me really curious about Keller and his food.

The menu

So precisely a month before the date we wanted to dine at Per Se, I tried to book a table via Open Table which was IMPOSSIBLE – there was never an opening. So I decided to go traditional and call up the restaurant. After a 15 minutes wait, I got a table on 19 July and 545pm (I was offered a table at 9pm but I think I will just fall asleep while eating).

Per Se – three Michelin stars –US$295 for the tasting menu – I have high expectations. I was prepared to be blown away. My heart was pounding when I reached the Warner Time Center. But first we needed to find the restaurant. The moment we reached the 4th floor of the building, Kat and I walked one round and we couldn’t find the restaurant. Thanks to its minimalist decor, we finally discovered that Per Se was behind the blue door that we walked past.

We got ourselves seated in the main dining room facing the Columbus statue and were shown the menu and were asked to make the selection. Once that was done, complimentary amuse-bouche was served to us.

Gougeres

Salmon tartare cornets

The first was gougeres – cute, warm and cheesy – which we easily finish off with one bite. The next was the famous salmon tartare cornets – this whimsical amuse bouche was served on a cone stand, and we bit off like an ice cream. I love the freshness of the tartare but I thought the “cone” was alright.

Oysters and Pearls

Once the amuse bouche was cleared, our tasting menu began. First, Oysters and Pearls. This dish essentially was a sabayon of pearl tapioca with oysters and caviar. This was my favourite dish of the night – the pearl tapioca was delicious and not overcooked. The oysters and caviar (pearls) tasted like the ocean – refreshing, and salty.

Heirloom Tomato Salad

Foie Gras

For the second dish, I have chosen Heirloom Tomato Salad. This was my first time trying heirloom tomatoes. For me, the taste of the tomatoes was like a cross between a plum and a tomato – they were sweet and juicy. As Kat was not a fan of the vegetable, she chose Foie Gras which was served with a side of brioche and a selection of salt. I did not have a taste of the foie gras (not a fan of the liver) but Kat did tell me that they were a bit salty (hence she did not need the salt given). For the brioche, I think once they have left it at your table for five minutes, the waiter would swing by and replace with another plate of warm brioche – which we thought was a bit excessive and wasteful.

Once we were done, we were presented with the bread basket. Kat didn’t get any and I saw a pretzel roll and I couldn’t resist it. I was sad – the roll was cold and chewy.

Sautéed Fillet of Mediterranean Lubina

Next was the fish course – Sautéed Fillet of Mediterranean Lubina. The fish was simple and perfectly cooked, and flaky. What I love was also the presentation of the dish – adored the little vegetable flower cut out.

Butter Poached Nova Scotia Lobster

The next dish we had was Butter Poached Nova Scotia Lobster. I was unsure is it because of the size of the lobster meat – I found it to be a bit too much and slightly overcooked. However I enjoyed the accompanying ragout of Brentwood corn – it was sweet and delicious.

Hill’s Farm Poularde

For the poultry course, we got Hill’s Farm Poularde. The chicken was tender and well seasoned. As I think they have stuffed the leg with (possible) bacon or pork (which I can taste it), I couldn’t finish the chicken.

Calotte de Boeuf

At this stage, we were struggling – our tummies were feeling the strain. And we got another meat course – Calotte de Boeuf. For me, it was perfectly cooked – medium rare (I must see blood!), salt crusted; and the jus was flavourful and light.

Roncal

For the vegetable course, we got a Roncal which was a medley of (mashed) vegetable. I don’t remember much of this dish as I didn’t really like it and I thought was the weakest among the lot we had. I believed I left the plate half eaten.

At this point, our waiter suspected that we were too full to stuff ourselves with any more food – he brought us a complimentary “palate cleanser” – it was some sort of flavoured sorbet with lavender meringue and sake. This was a life saver – it was light and refreshing – something that was much needed.

Coconut and Melon Sorbet

After the palate cleanser, desserts were served. Desserts at Per Se were never ending. They just kept giving us more! The first of the many desserts was the coconut and melon sorbet. The flavours were subtle and it was a nice and light start to the dessert course.

Maple Sour Mash

Next, we got the Maple Sour Mash which was a caramelised puff pastry topped with bourbon-maple syrup ice cream. The pastry was buttery and crisp, and for the ice cream – the flavour was once again subtle and not overpowering.

Chocolate

At this point, I was expecting them to serve us their famous Coffee and Donuts. But NO. Perhaps they thought we were full and didn’t serve it to us? Why? I maybe stuffed but I am greedy! Still Per Se managed to overwhelm us with chocolates, truffles, pulled-candy, macarons.

They will stuff you to death!

At the end of the meal, Kat and I got a pack of sandwich cookies which sadly did not make it into my stomach. They were crushed to bits on the way home to Singapore.

For me, the service at Per Se is a reflection of Thomas Keller – organised, (sterile), consistent and swift. I am not totally blown away by Per Se – I just feel there was always something missing. Still, it was a great experience which I am proud to have.

Chomp Chomp and Dessert Bowl

Since I moved to Serangoon/ Hougang 26 years ago, Serangoon Gardens is one of my frequent “playgrounds”. When I was a kid, I would follow Papa Ng (aka my dad) to Chomp Chomp Hawker Centre and get takeaways for family dinner. We would go overboard and order as much as possible. There was always leftover.

26 years later, Chomp Chomp Hawker Centre is still awesome. (Almost) everything at the hawker centre is delicious. My friend, Amy (Pikaland) was in town a couple of months ago and she was staying at my place, and I know it will not be right if she did not
go to Chomp Chomp.

We ordered a few plates to share – hokkien mee, oyster omelette, satay(satay!!!), chicken wings and not forgetting the infamous giant sugarcane juice! Everything at our table was delicious. We wiped out our food pretty fast, and I brought Amy to another joint for dessert.

Dessert Bowl (一碗甜品)opened about 2-3 years back and they are located right above a (sleazy) pub. Despite the appearance, the desserts are outstanding. My all time favourite is their mango pomelo sago – sweet, smooth, and you get a good bite from the pomelo and sago. Amy ordered the honeydew sago which was a bit bland for me.

Though Serangoon Gardens and Chomp Chomp received some minor makeovers, and got a little bit fancy, I still heart the place. It is like a cute little town with all these quirks and personality, and definitely worth a  visit.

oink’s guide to … New York City! Dylan’s candy bar and Serendipity 3

Kat wanted to revisit Serendipity 3 which she went at her last trip to New York City. If you are unfamiliar with Serendipity 3, this cute little bistro got famous because of this movie.

Dylan’s Candy Bar

When we reached Serendipity, there was a queue and we needed to wait for at least an hour. So we went around the vicinity and spotted Dylan’s Candy Bar – founded by the daughter of Ralph Lauren, Dylan Lauren. Before we went into the store, I was like “Okay, let’s take a look. I doubt I will buy anything’. All I can say was I had to take my words back.

The moment you stepped in, it was like modernised Willy Wonka and the Chocolate Factory – whatever sweets you want, they have it. Dylan stocked candy, chocolate and even related merchandises (Kat bought a pair M&Ms earrings).

I chanced upon a bunch of bacon flavoured lollies and I knew I have to get them for my bacon loving friend – The Food  Pornographer. While I was paying for them, the cashier went “Someone sure loves bacon”.

After Dylan, we went back to Serendipity and got our seats.

Garden salad

I went for the dinner special – country fried steak while Kat ordered the spiced chicken flambé. All the mains came with a garden salad – we only took one serving as “someone” don’t eat vegetables. Sad to inform the garden salad is just a salad. Nothing magical.

Spiced chicken flambe (US$23)

Kat was rather happy with the spiced chicken flambé which was drowned in this creamy winey (brandy Madeira to be specific)sauce. I had a taste – the chicken was cooked well as for the sauce, I don’t fancy it. The alcohol taste (and smell) was just overwhelming.

Country fried steak (US$20)

For my country fried steak, it was alright. Though the steak was overcooked, I like the gravy very much.

Frrrozen hot chocolate (US$8.95)

When one is at Serendipity, it will be very wrong to leave without drying their famous Frrrozen Hot Chocolate. Topped with (a lot of) whipped cream, this frozen dessert was a killer – it was rich and chocolatey. It was not disgustingly sweet so you just kept wanting more.  I was surprised the girl at the next table managed to finish it by herself. I was suffering from brain freeze!

One day I’ll be back for this

I am not very keen on the mains at Serendipity but I definitely come back for their desserts. Frrrozen!

oink’s guide to … New York City! Torrisi Italian Specialties

Touted as one of the most wanted tables in NYC, Torrisi Italian Specialties operates as a sandwich shop by day and just last year, they decided to open for dinner.

Kat and I rushed down to Torrisi after our ice cream. Phew we made it in time and managed to get the 6pm reservation. After a walk around the neighbourhood, we returned to the restaurant and  were promptly seated.

The menu for the night

Torrisi is small – there are only 18 seats. Everyone was seated at the same time, and all of us were to get the same four-course meal (antipasti, pasta, main and pastry) which changes daily and no menu substitution allowed. The service staff at Torrisi were warm and friendly. They took our bags so that we have more seating room. One of them noticed we have cameras and promptly told us that photography was allowed (just no flash).

The divine warm mozzarella

Once we were settled down, our first antipasti dish was served to us – warm mozzarella with Da Vero olive oil, milk thistle cream and a sprinkle of sea salt. This dish was DIVINE! And it was also the best dish we had for the night. The warm mozzarella which was made to order was fresh, chewy and ridiculously milky. The olive oil and the cream just worked so well with the cheese. The sprinkle of sea salt gave a bit of texture and enhanced the flavour of the mozzarella.

Garlic bread

While Kat and I were indulging in the warm mozzarella, a complimentary plate of garlic bread was given to us. The garlic bread was delicious – it was rich, crispy, and buttery.

Octopus salad

The next antipasti dish was the octopus salad. Can I say Rich Torrisi and Mario Carbone (chef-owners of Torrisi) know how to prepare seafood? The octopus was cooked to perfection – it was not rubbery – just a few bites, and everything just melted away.  

New Yorkese cucumbers

Next was the New Yorkese cucumbers. I was given the honourable task to finish this plate (Kat don’t eat vegetables. YAH). This dish was more like an assortment of pickles. Explained by our server, the cucumbers were aged differently – some were a few days old, while others were aged for a couple of months. I like some of them while some tasted like dill pickles which I don’t like.

Liverwurst and pretzel

Our last antipasti dish was liverwurst and pretzel. Though I don’t fancy liver, I decided to give it a try. Indeed, I still don’t like liver. The liverwurst was creamy and rich but it has a porky aftertaste which I hate. That said, love the pretzel!

Spaghetti de mare

For our pasta course, we got spaghetti di mare. I kid you not with my earlier comment on the brilliantness of the chefs when it came to cooking of seafood. Every piece of scallop, clam, prawn in my spaghetti di mare was well cooked – buttery and soft.

Black bass

When it came to our mains, our server told us we have a choice of a fish or meat course. Since I am not a fan of lamb, I went with the black bass. The black bass was not overcooked – it was flaky and delicious. The pairing of the black bass with pickled tomatoes was great – it made one salivate and wanting more.

BBQ lamb

I had a bite of Kat’s BBQ lamb with molasses vinaigrette. Though I like the vinaigrette, I really don’t like the taste of lamb – too gamey.

Lemon ice

Before the pastry was served to us, we were each given a tiny cup of Italian ice. The flavour of the day was lemon. I am a big fan of citrus – but the lemon ice was way too sour – I only managed to finish half of it. Still a good palette cleanser.

Dessert

Finally. Dessert. We were given a plate of pastry which consisted of celery sugar cookies, cannoli with Salvatore filling, rainbow cookies, rhubarb bar and sunchoke tart. My favourite was of course the cannoli – the “shell” was crispy and the filling was creamy and rich. I also quite like the rhubarb bar which was earthy and tart. As for the rest, they were alright – didn’t rock our world.

Though this was a four-course meal, it turned out to be a nine dishes affair. The portion for each course was just right. It was the first time we were not struggling to finish the food. For the price of US$50, this prix fixe dinner was value for money – everything that was served to me was fresh, well cooked and delicious.

oink’s guide to … Washington DC! Bistro la bonne

On the last day in DC, Kat and I decided to keep things simple and have dinner near our place (and we need not rush back to pack).

After walking around U Street, we settled on this small French bistro – Bistro La Bonne.

lobster bisque and crab meat (US$7.50)

As it was rather chilly (yah, the weather decided to turn nice and cooling on our last day in DC!), we started our meal with a bowl of lobster bisque and crab meat. The soup turned out to be more tomato-ish rather than a rich seafood flavour broth that a good lobster bisque should be.

steak frites (US$15.95)

My main for the night was steak frites. The steak was cooked to my preference – medium rare. The accompanying béarnaise sauce was flat, and didn’t help to enhance the flavour of the steak. As for the frites, they were over-fried and dried.

poulet roti (US$14.95)

Kat got the poulet roti – roasted chicken with mashed potatoes. I didn’t taste the chicken but she did tell me the dish was rather salty.

Bistro La Bonne was not exactly the best place to end our DC journey – still I really like bistro’s cosy ambience.

Beng Hiang restaurant

i dont know is it an age thing or we desperately needed comfort food – my friends (the same gang who dined with me at yuan xing) and i once again landed ourselves in an hokkien chinese restaurant – beng hiang.

i havent eaten at beng hiang for ages (i think about 4-5 years). i totally forgot how great the food is.

fried watercress with dried shrimps

the service was fast – 10 minutes after we have ordered, our food came! first stop, fried watercress with dried shrimps. i am used to having watercress soup where the vegetables will be cooked to death (which surprisingly was the right way to do it – this way of cooking released the “cooling” effect of watercress) – i never thought of stir-fry watercress. though the flavor was not profound, the vegetables were crunchy and delicious.

we also ordered braised beancurd with chicken and mushroom – this dish was alright, nothing spectacular, just a good homey dish.

days before the dinner, i examined the menu and told my friend c, i must have fish head soup with yam. this soup put me in the right place – though its a clear soup, its rich, flavorful and i am surprised that i quite like the fish head which was very meaty. and yam! i can never say no to yam.

the next stellar dish was the fried oysters with eggs. i heard that people go to beng hiang just for this dish. and indeed it lived up to its reputation. the eggs were thin and crispy and it go very well with the oysters. we were all delighted with the generous serving of oysters. we walloped this dish in minutes.

milk butter prawns

for the milk butter prawns, they really tasted like milk and butter – which was a bit weird and overwhelming for me. its still good and i thought i would love it – in the end i was ok with it.

last time at yuan xing, we did not had a chance to try their crispy roast chicken, this time round, we got to try beng hiang version which was “finger licking good”. the skin was crisp. the chicken was a tad undercooked, however when sprinkled with lime and sour plum powder, magic happened, everything just tasted oh so good.

kong bak bao

beng hiang was also famous for their kong bak bao (braised pork belly with chinese mantou). i didnt eat them – based on the expression of my pork-eating friends, i think they are pretty good.

hokkien mee

and of course, we cannot not order their famous hokkien mee. once again it was alright for me, mainly because i am not a fan of yellow noodles (gan shui taste aka alkaline taste) and also my body dont digest the noodles very well. the sauce was great though. a tiny bowl of the noodles was good enough for me.

the really cute thing about beng hiang is that its so old school – some of the things they do are really tacky. we learnt on that night it was like the place to go to celebrate birthday (which was what we were doing) – throughout the night, birthday songs were played on their system (both english and chinese version) again and again. when the restaurant was about to close, and we were the only table left, we sang out loud birthday song to our three birthday girls. it was a hilarious and fun night.

ponggol choon seng seafood has opened an outlet near my home a couple years back (my friend L told me this outlet is a franchise). all these while, i have only been ordering mee goreng or fried mee sua from them. so for a recent chinese new year reunion dinner with the girls, L and i decided to be brave and order crabs from them.

and the results? the chilli crabs were really good. personally i am not a big fan of chilli crab (i rather have salted egg crab, butter crab, crab bee hoon … just not chilli crab) – but i seriously dont mind choon seng version. it had decent amount of heat without killing anyone and most importantly, it did not taste ketchupy (yes jumbo, i am talking about you). the price for crabs were really good too – i got two medium crabs for S$45!

i also got other dishes such as prawns (a regret purchase. expensive!), fried mantou (to go with the chilli crabs gravy) and of course their famous mee goreng. all turned out to be pretty good too.

i can now forsee me rolling to choon seng more often ;p
